Vegan recipe: easy and tasty

  • 2 cloves of garlic
  • 1/4 onion
  • 1 red pepper
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • 2 tablespoons of extra-virgin olive oil
  • 1 cup of uncooked quinoa
  • 2 cups of vegetable broth
  • 1/2 cup of frozen corn
  • 1/2 cup of canned black beans, drained and rinsed
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of crumbled feta cheese (optional)


  • In a large saucepan, heat the olive oil over medium heat.
  • Add the garlic and onion, and cook for 2-3 minutes, stirring occasionally.
  • Add the red pepper, cumin and oregano and cook for another 3-4 minutes, stirring occasionally.
  • Add the quinoa, vegetable broth, corn, black beans, salt and pepper, and bring to a boil.
  • Reduce the heat and simmer, covered, for 15-20 minutes, or until the quinoa is tender and all the liquid is absorbed.
  • Remove from the heat and stir in the cilantro and feta cheese (optional).
  • Serve warm.
